The Dominic family has been involved in the wine industry for some 90 years now, beginning with small vineyards in Croatia before the move to Australia in 1956. We now have substantial vineyards established in South Australia's largest and most popular wine growing regions.

Brian Dominic is the third generation of winegrowers and strongly believes that producing fruit that is of the highest standard and character is what truly make the wine stand out from the rest.

"We would not be able to produce wines of which we are proud of if it was not for the dedication and commitment in the vineyard".

The vineyards are in 4 seperate locations. Each location was chosen for its unique soil type, contours and surrounding environment. Using the latest irrigation and soil monitoring tools to ensure the growth of the vines is controlled. Along with constant nutrition analysis of the soil and vine petioles, measurement of salinity and soil temperature we aim to fully control the environment which the vines grow.

This technology has helped us better understand the vines, the fruit and how to improve the flavour. Each of the vineyards has its own character expressed by a number of different rootstocks and clones used. Different soil, row directions, contours and microclimates all are which make our fruit unique.

Watchful timing prior to harvest and careful discussion with the winemakers the fruit is harvested in the cool night air, to preserve the fruitful character, minimize oxidization and to capture its character.

In careful selection we call upon vineyards with the same passion and commitment as our own.

Either blended with our own wines, to further define its character or to stand alone we have established links to some of the best vineyards in Coonawarra, Barossa Valley, Clare Valley, Adelaide Hills and Langhorne Creek producing Shiraz, Cabernet, Merlot, Riesling and Sauvignon Blanc.
